Can You Can?


Recently asked if I knew how to can my vegetables, I was momentarily at a loss for words. Who doesn't know how? Or is it becoming a lost art? Something only rural, stringy hair, elderly jungle freaks are capable of performing...a leftover skill born from years of moonshine history?

Yes, I know how.

Yes, I own a canner and empty ball jars.

And I really enjoyed this article.

Yup, something of a lost art but I think making a resurgance with the lousy economy. We can and I grew up canning. But when we once had to buy canning jar lids a store clerk was baffled as to why we wanted to do this. I explained we were making jam. He said and I quote "but we sell that in aisle 3."

I think you'll get a kick out of this story...last year my husband and I realized that we'd planted way more tomatoes than we could consume so we decided to can the surplus.

We went over to our neighborhood hardware store and wandered up and down the aisles looking for a canner but we couldn't find one. I approached the gaggle of teens who appeared to be running the store and asked for help finding a canner. They conferred briefly and then one of them led us through the maze of aisles and proudly pointed at...a galvanized garbage can.

I couldn't help myself, I was laughing so hard I had tears running down my cheeks. When I tried to further explain what a canner was he just looked confused and said "I don't think we have one of those..."

Fortunately the owner returned at just the right moment and was able to show us where he had ONE canner with about 6 inches of dust on the box.

So, yes, it is a lost art in many places.

Oh man, one of the few things in life that I wanted to learn how to do but never did. My mom thought it was a waste of time when you could buy frozen dinners (no really - I'm not kidding). It's hard now to find someone to actually teach you how.

I would like to learn how to can, but I am convinced that I would end up with some nice botulism cultures if I tried.

Yeah for both Lee and Melissa, what's up with these very young store clerks who have no experience with such lost arts? We need seasoned folks... and those committed to our heritage or am I yet again rabbit-chasing some tangent?
